1 rkl kookosöljyä
1 keltasipuli
2 valkosipulinkynttä
1 cm pala tuoretta inkivääriä
1-2 rkl punaista currytahnaa
1 ½ tl jauhettua korianteria
1 tl jauhettua kuminaa
1,5 l kasvislientä
3 dl punaisia linssejä
1 keskikokoinen kukkakaali
1 keskikokoinen bataatti
2 suurta kourallista babypinaattia
3/4 tl hienoa merisuolaa
1. Lämmitä kookosöljyä suuressa kattilassa keskilämmöllä. Lisää hienonnettu sipuli ja valkosipuli, ja kuullota 5–6 minuuttia, kunnes sipulit ovat kullanruskeita. Raasta joukkoon inkivääri, lisää currytahna sekä mausteet, ja jatka kuullottamista vielä 2 minuuttia.
2. Kaada kattilaan kasvisliemi ja huolellisesti huuhdellut punaiset linssit. Kiehauta keitto, vähennä lämpöä ja hauduta kannen alla 5 minuuttia.
3. Hienonna sillä aikaa kukkakaali ja kuutioi bataatti noin 1 cm x 1 cm kokoisiksi paloiksi.
4. Lisää hienonnetut kasvikset kattilaan, peitä kattila kannella, ja hauduta 20–25 minuuttia, kunnes kukkakaali ja bataatti ovat pehmeitä.
5. Mausta keitto suolalla ja tarkista maku. Lisää currytahnaa ja/tai suolaa tarpeen mukaan. Nosta kattila pois liedeltä.
6. Lisää keittoon pinaatti juuri ennen tarjoilua. Sekoita kevyesti, kunnes pinaatin rakenne pehmenee.
Tarjoile itämainen linssikeitto lämpimänä tuoreella korianterilla koristeltuna.
